如何正确地品味Espresso?

Espresso常被翻译为“意式浓缩咖啡”,但这种译名似乎很难体现其“咖啡之魂”的美誉。在意大利人的生活中,Espresso虽常见却又独特,若用寻常咖啡的喝法似有牛嚼牡丹之嫌。那么,Espresso又该如何品味呢?

There are two main Italian espresso drinks: a tiny cup of straight espresso and splendid cappuccino. Italians might disapprove of your espresso drinking, as they have their very own, very serious coffee culture. So how Italian people drink espresso?

1、了解何为Espresso?
Espresso咖啡机以深度烘焙的综合咖啡豆,研磨成极细的咖啡粉,经过高压下的高温热水,在不超过秒的短时间内急速萃取的浓烈咖啡液体称之为“Espresso”。

Espresso machines use 132 pounds per square inch of pressure to extract coffee, which differentiates it from brewed coffee, for example, which just uses gravity. One cup, traditionally, is seven grams of coffee, and should take no more than 25 seconds to make.

Espresso一词含有“表达”(Express)、“直接”(Expressly)的含义,因此饮用Espresso时最好能够品尝新鲜出炉的咖啡。

优质的Espresso表面会漂浮着一层厚厚的呈棕红色的油脂沫:“Crema克丽玛”,饮用咖啡的最佳时期是在Crema尚在表面漂浮时。
Drink it quickly
Espresso needs to be drunk while the "crema" is still on top. The crema is a creamy emulsion of the coffee's oils, and acts as a lid covering the espresso, keeping all the aromas in.

6、不要饮用没有Crema的

Espresso

Crema呈现的温暖色调、强烈美妙的芬芳香味、有如天鹅绒般柔软光滑的液体、强烈且持续的口感,而且消失极快,因此没有Crema的咖啡将大大降低在嗅觉、味觉以及视觉的体验。 
Because the crema thins out and disappears so quickly, ordering it anywhere that's not the counter means you're likely to get it too late. It would be a huge loss for drinking experience.

与咖啡师傅交谈、享受精神焕发的感觉、体验快节奏的快乐。
Take a second to enjoy the tradition surrounding it
Order it at the bar and start a conversation with the barista, and enjoy the pick-me-up in the morning, as well as the quick atmosphere.

Espresso,但若在11点以后喝卡布奇诺,意大利人就会用奇怪的眼神看着你。

You can have an espresso any time of day. In Italy, people will look at you very strangely if you have a cappuccino after 11.

9、不加牛奶,只喝纯粹的Espresso
有人喜欢加点牛奶让咖啡变成Espresso Macchiato(浓缩玛奇朵),但意大利人会对此十分介意。
