Dates back to the thirteenth century, Chianti wine is produced in the
Chianti region, in central Tuscany, Italy. Chianti is the first definition of a wine-area that was made in 1716. Chianti is one of the most famous Italian wines in the world, even many people who rarely drink
recognize the wine; Chianti is also the most understood with the great changes in the Chianti formula。

基安蒂产区最重要的葡萄品种是桑娇维赛(Sangiovese),意大利DOC酒法规定,Chianti DOC级别的葡萄酒中,桑娇维赛葡萄的含量不能低于70%;Chianti DOCG级别的葡萄酒中,桑娇维赛葡萄的含量不能低于80%。基安蒂另外种植的葡萄品种还有卡内奥罗(Canaiolo)、科罗里诺(Colorino)等。现在,也允许加入一些国际品种如赤霞珠(Cabernet Sauvignon)、美乐(Merlot)等。
 
 
According to DOC regulations since 1996, the blend for Chianti and Chianti Classico
has been 75–100% Sangiovese, up to 10% Canaiolo and up to 20% of any other
approved red grape variety such as Cabernet Sauvignon, Merlot or Syrah.

基安蒂酒的产区横跨佛罗伦萨和锡耶纳两座城市,然而实际上的“基安蒂地区”概念并不大,但目前托斯卡纳出产的许多其他葡萄酒也能被打上基安蒂葡萄酒的标签。基安蒂酒目前拥有八个次产区。
 
 
Chianti is a small region within Tuscany, but a wine calling itself “Chianti” is allowed to
be made almost anywhere in Tuscany. Because of this, Chianti has 8 sub-zones.

古典基安蒂(Chianti Classico)来自于基安蒂中心条件最好的古老产区,产量的限制更加严格,平均水准更高,与此类似的是基安蒂鲁菲娜。
 
Chianti Classico is the name given to wines from the original historic boundaries. Both
Chianti Classico and Chianti Rufina are likely to be of higher quality, since they are
made in smaller quantities from distinct historical areas.

要使用古典基安蒂的标识“黑公鸡”,光是在古典基安蒂本土生产远远不够,还需要达到生产规范所规定的一系列要求。
 
Only Chianti from this sub-zone may boast the black rooster seal (known in Italian as a gallo nero) on the neck of the bottle, which indicates that the producer of the wine is a member of the Chianti Classico Consortium, the local association of producers.

除了上文中所提到葡萄标准以外,普通的基安蒂葡萄酒酒精浓度不低于12度,酒的橡木桶必须拥有超过7个月的历史;每公顷土地的葡萄产量不得超过7.5吨。
 
Chianti Classico must have a minimum alcohol level of at least 12% with a minimum of 7 months aging in oak; the harvest yields for Chianti Classico are restricted to no more
than 3 tons per acre (7.5 tonnes/hectare).
